    Meet Your Guide

    Hi I’m Michele Redmond, a Dietitian Nutritionist and French-trained chef who understands the reality of busy days. When life gets hectic, I’m a practical, low-key home cook.

    I also call myself a Food Enjoyment Activist because we all deserve good health without stressful mealtimes. We’re often exposed to rules about healthy food which can turn eating–a self-care act that should feel good–into a self-improvement project.

    This course is one way I help people create habits and actions to meet their health goals and enjoy eating well in ways that simplify choices, save time and make mealtimes easier on time-starved days.

      What if I already eat healthy most of the time?

      Great! This program is for people like you who want to make sure their meals work harder for their health but with less effort from you. You’ll learn how to close common nutrient gaps and make healthy habits easier to maintain.

      What cooking or prep skills are needed?

      It’s for all levels of cooking skills and you’ll learn chef-level flavor techniques, time-saving methods, and culinary nutrition strategies that enhance your existing skills.

      How are the recipes and ingredients used?

      The program teaches you how to easily tweak recipes into new dishes and includes a system that optimizes common convenience ingredients and what’s in your pantry (dry, canned and frozen foods).

      What eating style is taught in the program?

      The program focuses on flexible recipes and techniques adaptable to most eating patterns with a focus on plant-rich meals that flex to include a variety of protein-rich ingredients.

      What is the nutrition & health focus?

      To simplify nutrition and focus on high-satiety fiber and protein diverse meals that solve common nutrient gaps without fuss and improve your overall health and especially heart health, gut health and metabolism.

      What is Michele’s teaching background?

      Michele has taught culinary nutrition in universities, medical schools, corporations and the Cordon Bleu in Paris, but she also does improv comedy so she’s about finding the fun with others and in teaching.

      Participation, Schedule and Program Fee

      • The 2-hour classes will kick off in May.
      • The in-person program is limited to 10 people to encourage individual participation and group fun around food and eating.
      • The specific dates for classes over the 10-week period depend on input from participants to accommodate schedules.
      • The program introductory fee is $299 for 8 hours of in-person classes, meals, Q & A with Michele and online course resources.
